Eventually, these dirty coils will allow refrigerant to escape the system. Once the refrigerant is gone, the system cannot cool the home. Keeping the coils clean, as well as the rest of the air conditioner, prevents these problems and the resulting breakdowns that occur from a lack of maintenance.
